Happy Tuesday!
On Sunday I posted a picture of my favorite Apple Cake on Instagram and I thought I'd share the recipe with you. I've tried a few different apple cake recipes over the last few Autumn seasons, but this one is my favorite.
Recipe:
4 cups chopped Apples (I used Honey Crisp)
2 cups all purpose flower
2 cups sugar (I used about 1 1/2 cups)*
2 teaspoons baking soda
3 teaspoons ground cinnamon (sometimes I add a bit extra)
1 teaspoon salt
1/2 cup vegetable oil
2 eggs, beaten
2 teaspoons vanilla extract
(1 cup chopped walnuts are optional, I prefer the cake without them)
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease
and flour a 9x13 inch pan. In a medium bowl, stir together the sugar and
apples, set aside. Sift together the flour, baking soda, cinnamon and salt.
2. In
a large bowl, stir together the oil, eggs and vanilla. Add the apples and
sugar, mix well. Stir in the dry ingredients (then the nuts if you decided to add them). Pour into the
prepared pan and spread evenly.

3. Bake
in the preheated oven for 40 - 45 minutes, or until cake springs back to the
touch.
*I've substituted Sugar with Agave Nectar in the past
It even tastes better the next day.

Thanks for the recipe Lilly - it looks so yummy and easy to make - I have all the ingredients at home. My kids LOVE apple anything - so I think this will be our weekend project to make together :-)

I don't see a measurement for the vegetable oil. How much do I use? Sorry baking newbie!!
